Phait's Plates: What is pork belly, anyway?

PLATE: Pork BellyLOCATION: Sweet Cheeks BBQI watch a lot of Top Chef, and it seems like every week, someone's cooking pork belly.  I always nod along knowingly, talking about how delicious/tender/rich/salty/fatty/freaking-awesome pork belly is.  But to be honest - I wasn't 100% sure what it was. So finally, I decided to look it up.  It's a boneless cut of fatty meat, popular in both Asian and European dishes.  How do you know pork belly in your daily life?  BACON!The bacon pork belly at Sweet Cheeks was admittedly a small part of an awesomely larger meal, but it was amazing.  Honestly: amazing.  It was sauceless, which suited it very well because to put sauce on it would have been a crime.  On its own, the meat melted in my mouth more effortlessly than ice cream (think about that one: bacon ice cream).If you're going to Sweet Cheeks, even walking by sweet cheeks, you don't want to miss the pork belly.  I thought about ways to describe it for this post, and this is what I came up with:
